Ingredients You’ll Need
You may already have everything you need in your pantry, so why not make it today?
For the Pumpkin Cake
- All-purpose flour, salt, baking soda, and baking powder: These pantry staples provide the structure and leavening needed for the cake.
- Cinnamon, nutmeg, and cloves: The MVPs of this cake! These warm spices bring out the delicious pumpkin flavor.
- Light brown sugar and granulated sugar: A combination of sugars adds sweetness and moisture.
- Eggs: Help provide structure and give the cake its soft texture.
- Vegetable oil: Keeps the pumpkin cake moist.
- Vanilla: Adds a little extra flavor.
- Pumpkin puree: The star of the cake! Be sure to use pure pumpkin puree, not pumpkin pie filling.
For the Brown Butter Cream Cheese Frosting
- Unsalted butter: Browning the butter adds a deeper, nutty flavor to the frosting. It really is worth the extra step!
- Cream cheese: Use softened cream cheese for a smooth, creamy frosting.
- Powdered sugar: Adds sweetness and balances the tanginess of the cream cheese.
- Vanilla and heavy cream: Add flavor and help create a smooth, spreadable frosting.
Tip: After browning the butter, let it cool and solidify in the refrigerator. You’ll still want it soft enough to mix, but not melted. This helps keep the frosting from becoming too thin.

How to Make Pumpkin Cake with Brown Butter Cream Cheese Frosting
For the Pumpkin Cake
1. Mix the dry ingredients: In a medium mixing bowl, whisk together the flour, salt, baking soda, baking powder, cinnamon, nutmeg, and cloves. Set aside.
2. Mix the wet ingredients: In a separate large mixing bowl, combine the light brown sugar, granulated sugar, eggs, vegetable oil, vanilla, and pumpkin puree. Mix until well combined.
3. Combine the ingredients: Using a rubber spatula, fold the dry ingredients into the wet ingredients just until combined. Be careful not to overmix the batter.
4. Bake: Pour the batter into a 13 x 9-inch cake pan sprayed with nonstick cooking spray. Bake in a preheated oven at 350°F (180°C) for 28–35 minutes. The cake is done when a toothpick inserted into the center comes out with a few moist crumbs. Allow the cake to cool completely before frosting.
For the Brown Butter Cream Cheese Frosting
1. Brown the butter: In a small saucepan, melt the butter over medium heat. Continue stirring as the butter melts and begins to foam. Small brown specks will start to form on the bottom of the pan, and the butter will develop a nutty aroma. This takes about 4 minutes for this amount of butter. Watch it carefully so it doesn’t burn! Immediately pour the browned butter into a heatproof bowl. Allow the butter to cool on the counter for about 10 minutes, then place it in the refrigerator for 30–40 minutes to solidify. You want the butter soft but no longer melted.
2. Make the frosting: In a large mixing bowl, beat the solidified brown butter and softened cream cheese with a hand mixer until smooth and creamy. Add the sifted powdered sugar, vanilla, salt, and 1 tablespoon of heavy cream. Mix until combined. Add another tablespoon of heavy cream if needed until the frosting reaches a smooth, spreadable consistency.
Assemble the Cake
1. Frost the cake: Once the pumpkin cake has cooled completely, spread the brown butter cream cheese frosting evenly over the top. Slice, serve, and enjoy!

Tips for the Best Pumpkin Cake
- Use room-temperature ingredients: Room-temperature eggs and pumpkin puree help the ingredients combine evenly and create a tender cake crumb.
- Keep an eye on the butter: Continuously stir the butter while browning to prevent it from burning. Once you see brown specks and smell a nutty aroma, remove it from the heat.
- Don’t frost a warm cake: Make sure the cake has cooled completely before adding the frosting. Otherwise, the frosting will melt.
- Don’t open the oven too early: Resist the temptation to open the oven while the cake is baking. Opening it too early can cause the cake to sink.
